1/2 cup soft butter
1 cup sugar
2 large eggs
1 mashed ripe banana
8 ounces crushed pineapple (do not drain)
2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 cup shredded coconut
Preheat the oven to 350 degrees. In a large bowl, cream the butter and sugar with a mixer until light and fluffy. Add eggs, one at a time, and beat until combined.
Add the mashed banana and pineapple and stir.
In a separate medium bowl, sift together the flour, baking powder, baking soda, and salt. Add to wet ingredients.
Stir in coconut flakes.
Pour the mixture into a greased loaf pan (9 x 5). Bake for 60 minutes or until a toothpick comes out clean.
