Ingredients:

Salad:
3 cups broccoli chopped florets, finely
3 cups cauliflower chopped florets, finely
2 fine cupsly chopped carrots
15 ounces sweet corn from the can, drained
½ cup red onion cut into cubes
10 slices bacon, cooked, drained and minced
1 cup shredded sharp cheddar cheese
Salad Dressing – Option 1 (Ranch Dressing):
Half a cup of mayonnaise
½ cup sour cream, kefir or Greek yogurt
2 tablespoons dry ranch mix, or more to taste
Salad dressing option 2 (without ranch):
Half a cup of mayonnaise
½ cup sour cream, kefir or Greek yogurt
2 tablespoons lemon juice
½ cup fresh or warm honey
Half a teaspoon of salt

Salad:
In a large bowl, mix all salad ingredients together. Use one of the two salad dressing recipes provided.
Salad Dressing – Option 1 (Ranch Dressing):
In a medium bowl, combine mayonnaise, sour cream (or kefir or Greek yogurt) and add 1 or 2 tablespoons of dry ranch mixture. Mix well and taste to see if you need to add more dry ranch mix to the marinade.
Salad dressing option 2 (without ranch):
In a small bowl, mix mayonnaise, sour cream (or kefir or Greek yogurt), lemon juice, honey, and salt together. Note that the honey should be soft and liquid, warm it if necessary so that it blends easily. Whisk the ingredients until well blended and smooth. Add salt if needed.
Gradually add the salad dressing of your choice to the large bowl with the salad ingredients, and stir everything together
